Paleo Hummous

We love hummous over here at London Paleo. It’s definitely been one of the things that we’ve missed most. But not for long! This is a pretty good stand in. This is made with roasted cauliflower and garlic but the possibilities are endless – roasted red pepper, butternut squash, beet? Delicious and healthy.

1 large head of cauliflower, cut in to chunks

2 cloves garlic, smashed

2 tbsp olive oil, plus a drizzle for after

Salt and Papper

1/2 c light tahini

1 lemon

Set oven to 200 C. Toss cauliflower and garlic with olive oil, salt and pepper and spread on roasting pan. Roast for 20 -30 mins giving the pan a shake here and there. You’ll smell the garlic, don’t let it burn as it gets bitter! Remove from oven and cool. Place roasted veg, tahini and lemon juice in food processor (or in my case a blender) and whizz until combined. I had to add a bit of water to get it going in my blender. Add more S&P and olive oil to your liking.

Pancakes in a Pinch

My 2 year old woke up in a funk this morning (she hates Mondays too) so to set her straight I shouted, ‘pancakes for breakfast!!’ Then I went and looked in my fridge and realized we had no eggs. Oops. Well you can’t break a pancake promise to a 2 year old so I had to work with what we had. I didn’t even measure things!

Eggless Banana Pancakes

1 ripe banana

1/4 mug coconut flour

Glug almond milk

Dash baking soda

Splash of vanilla

You’ll want it to be the consistency of cookie dough. Melt a spoonful of coconut oil in a hot pan and throw in a blob of batter. Let it cook for a few minutes, until the edges are brown, and flip. It won’t resemble a pancake in the slightest, more like fried porridge. We added some honey from a friend’s farm in the US and voila – it was a hit! I ate half and it was pretty darn good.
