Pancakes in a Pinch

My 2 year old woke up in a funk this morning (she hates Mondays too) so to set her straight I shouted, ‘pancakes for breakfast!!’ Then I went and looked in my fridge and realized we had no eggs. Oops. Well you can’t break a pancake promise to a 2 year old so I had to work with what we had. I didn’t even measure things!

Eggless Banana Pancakes

1 ripe banana

1/4 mug coconut flour

Glug almond milk

Dash baking soda

Splash of vanilla

You’ll want it to be the consistency of cookie dough. Melt a spoonful of coconut oil in a hot pan and throw in a blob of batter. Let it cook for a few minutes, until the edges are brown, and flip. It won’t resemble a pancake in the slightest, more like fried porridge. We added some honey from a friend’s farm in the US and voila – it was a hit! I ate half and it was pretty darn good.
